This week’s New Food of the Week was Buckwheat or Soba Noodles. Buckwheat noodles are a staple in Japanese cuisine. They can be eaten hot or cold. Several of my friends had some tasty buckwheat noodle recipes to share as part of this week’s challenge. I know you are going to find some new recipes to try. Enjoy!
Buckwheat is naturally gluten free. You can find buckwheat noodles that are gluten free. However, you’ll want to check the label as many contain wheat flour. Eden Foods is one company that offers a 100% gluten free noodle.

With most of the recipes listed below, you can substitute whole wheat noodles if you can’t find buckwheat noodles. I like to get mine at a local Asian market. Many grocery stores carry them in the Asian foods section. So take a look the next time you are in the store.
