Blueberry, Cashew, and Feta Salad
Whole Foods recently had a sale on organic blueberries. It was such a great deal that I bought a case (12 pints) of delicious blueberries. I have put a few pints up in the freezer. The others are destined to be used this week in recipes just like this one.
This Blueberry, Cashew, and Feta Salad is a great side salad. It combines the sweetness of berries, the saltiness of the feta, and the crunch of the nuts. Cashews are a good source of proteins, just like other nuts. You can make this salad into an entree by adding grilled shrimp or chicken to complete the dish.

Yield: 4 side salads Blueberry, Cashew, and Feta Salad
Prep Time 5 minutes Total Time 5 minutes Ingredients
- 6 cups of mixed greens or chopped lettuce of your choice
- 1 cup of fresh blueberries
- 1/3 cup cashews, chopped
- 1/3 cup crumbled feta cheese
- 1 1/2 tablespoon red wine vinegar
- 2 tablespoons olive oil
- 1/2 teaspoon honey
Instructions
- Combine mixed greens/lettuce, blueberries, cashews, and feta cheese together in a large bowl.
- Combine vinegar, oil and honey in a lidded container. Shake to combine.
- Pout dressing over salad. Toss to combine. Portion out salad and serve.
