These banana oatmeal muffins sound like a dream! I love that they’re a healthier take on the classic cupcake. The tip about using really ripe bananas is genius – I’ll definitely be stocking up in the freezer. I’m curious, though, has anyone tried adding coconut flakes as an add-in? I bet they’d give these muffins a tropical twist. And I’m with you, muffins are the ultimate portable breakfast. Can’t wait to give this recipe a go!
