It’s seems like forever since I posted a meal plan. I’ll admit that I haven’t been very good about planning and that has resulted in us going out to eat quite a bit. Looking back, I’m stunned at how much we spent going out to eat. It’s ridiculous.
I’ll be the first to stand up and admit that I love going out for ethnic food. I just HATE paying the bill afterwards. This week, I’m trying several new recipes that I found on Pinterest. Each of them looks great and is sure to keep me out of the habit of going out.
My kids are back in school. What about yours? When school is back in session, dinners need to be easy to prepare. There always seems to be some afternoon or evening activity my kids or I have to go to. So, weeknight dinners need to be easy to prepare or made ahead and thrown in the oven for a reheat. This week’s healthy meal plan includes at least one crock pot meal, repurposing of leftovers, a few make aheads, and another super easy meal. What kinds of meals do you like to make on weeknights in the fall?

Crockpot Chili with cheese and sour cream
Chili Cheese potato wedges with leftover chili, sour cream, and cheese.
Sweet Potato Waffles with strawberries and blueberries, bacon
Shrimp Scampi Pasta, garlic bread, caesar salad
Vietnamese Pork and Vermicelli Bowl

Hi Nicky! I always love your meal plans. You have so many great tastes. I love the idea of using leftover chili with potatoes. I’m going to have to try that. That certainly would make it feel like a whole different meal. The Mexican flatbread pizzas sound great too. I like to make flatbread pizzas and the Mexican twist will be fun. My kids started back to school this week. I pick them up from school after I get off work and we go straight to football and cheer practice. I don’t have a night off. We’re off to the high school game tonight to see my oldest play. Sticking to my real food diet is really tough now so I appreciate the new recipes. They are good motivation.
