This week, my family has a REALLY busy week. I’m sure you have week’s like that too! With my schedule in mind, I have scheduled several quick and easy dinners. Soup and salad or soup and sandwich nights are favorites among my family. I keep frozen broth and vegetables in the freezer for these kind of meals. I just throw it all together and it’s ready in no time! Try this yourself and you’ll find yourself scheduling soup and sandwiches night more often.

Sunday Pot Roast with potatoes, carrots, green beans, and Dill Cucumber Salad
Monday Grilled Cheese Sandwiches with Vegetable soup
Taco Tuesday Southwestern Taco Bake with Cornbread Crust, Green Salad with Spicy Ranch Dressing
Wednesday Beef and Bean Nachos with leftover shredded pot roast, pinto beans, salsa, guacamole, diced tomatoes, corn kernels, and sour cream.
Thursday Loaded Potato Soup and Green Salad with veggies, Balsamic vinaigrette
Friday Hawaiian Pizza ( ham, pineapple, and bell pepper), Caesar Salad
Saturday Ratatouille (eggplant, zucchini, tomato casserole), lemon thyme couscous, spinach salad
