I love how it puts a unique spin on potato salad. I’m curious, have you tried using different types of potatoes like fingerlings? Also, how did the kids react when you told them the yellow version was just as good, even if it didn’t have the traditional color? I might try this at my next picnic and see if I can get my friends to do a taste test between the red and yellow versions.
