These Vietnamese Spring Rolls sound amazing! Love that they’re so quick and easy, perfect for a busy day. And getting the kids involved is a great idea. I’m curious, has anyone tried making them with different types of noodles instead of just rice vermicelli? Also, how does the Thai peanut sauce hold up if you make the rolls ahead?
