I love how it combines Indian flavors with a vegan-friendly twist. The idea of taking it on the go is great – I once made a similar salad for a beach picnic and it was a hit. I’m curious, though, what would happen if you swapped the raisins for something like dried cherries? Would it change the flavor too much?
