BIRRIA & qUESO BIRRIA TACOS

INGREDIENTS

Dried Guajillo Chiles | Garlic Cloves Sea Salt | Ginger Cumin | Whole Cloves Oregano | Cinnamon Stick Black Peppercorns | Chicken Broth

ADOBO

Beef Birria  Chuck Roast Beef Bones Olive Oil Onion Garlic Cloves Bay Leaves

TACOS Corn Tortillas Cheese Cilantro Onion Lime Hot Sauce

The traditional adobo consists of toasted dried ancho chiles, guajillo chiles, pasilla chiles, garlic, onion, cumin, oregano, cinnamon, and clove.  These ingredients are blended together and simmered for a short time to make a smooth paste that is used to season the beef.

INGREDIENTS

SEAR THE BEEF AND BONES

While the chiles are cooking, add 1 teaspoon of olive oil to a large skillet. Add beef soup bones (if using) and brown bones on all sides. Work in batches to prevent overcrowding. In the same skillet, add the remaining olive oil and brown the chuck roast on all sides.

Add the browned beef bones and  chuck roast to the adobo in the Dutch oven followed by the garlic, onion, bay leaves, and salt. Bring to a simmer.  . Cover and place the pot in the oven to cook at 350°F for 3 hours. Remove the pot from the oven let rest for 10 minutes. 

COOK THE BEEF IN ADOBO

Shred the cooked meat and skim off excess fat from cooking liquid.  Dip each tortilla in the adobo and fry each side of the tortilla in hot oil just until firm.  Top one half of the tortilla with shredded beef and cheese. Fold over the tortilla to form your taco.

TACOS BIRRIA

Fry the taco until it's as crispy as you like it.  Transfer to a plate and repeat with remaining tortillas. Serve with bowl of consommé/cooking liquid topped with chopped cilantro and chopped white onion.
