Everyone loves their vacation time off. You’re in a new setting, that’s hopefully revitalizing your mind and giving you a much-needed break from the hustle and bustle of your daily life. You want to take this time off to discover new places, meet new people, pamper yourself and hopefully do some self-reflection.
What you don’t want to do is spend a lot of time doing everyday tasks that you would do back at home too, such as cooking. Unless you thoroughly enjoy cooking and don’t mind spending time in the kitchen, being forced to cook on your holidays can be irritating. That being said, cooking your own food will save you a significant amount of money that you can then spend as you wish – on things that really matter to you.
Here are a few healthy dinner ideas which are delicious, simple and quick to prepare – perfect for your vacation. They are loaded with enough nutrients and minerals that will provide you with the energy you need to enjoy your vacation.
- Chinese Style Fried Rice
Fried rice can be as simple or complex as you want; either way, it’s going to be quick and delicious. The best part is that you won’t be using many dishes.
Ingredients
- 2 cups cooked white rice, (cold)
- 2 tbsp of soy sauce
- 1 cooked chicken (chopped)
- 1 onion (chopped)
- 1 egg
- 1 tbsp water
- 1 tbsp butter
- 1 egg
You may use brown rice for this recipe if you’re weight conscious and wish to keep the inches off your belly. Note that when you initially cook the brown rice, use ¼ to ½ cup more water than you would use to cook white rice.
Get yourself a large skillet or wok (a pot would work too), put in the butter and place it on medium low heat.
In a bowl beat the egg with water and add it to the skillet. Let it stay flat for about 2 minutes, then remove it and then chop it into small pieces.
In the same skillet, heat up the oil, add in the onions and sauté them until they are tender. Pour in the rice, pepper and soy, Stir fry everything together for 5 minutes. Put in the eggs, mix into rest of ingredients.
Your Chinese style chicken fried rice is ready! Serve it hot!
- Fettuccine Alfredo
Ingredients
- 24 ounces of dry fettuccine pasta
- 1 ½ cup of heavy cream
- 1 cup butter
- Pinch of garlic salt
- Salt and pepper to taste
- ½ a cup of Parmesan cheese (grated)
- ¾ cup of Romano cheese (grated)
In a large pot, bring water that is slightly salted to boil. Pour in the fettuccine and cook until the pasta is al dente (about 8-10 minutes). Drain the water.
Put another saucepan over low heat and melt some butter into the heavy cream. Season with salt, pepper and the dash of garlic salt. Increase to heat to medium, pour in the cheese, making sure you’re stirring it as your pour it in as this helps thicken the sauce.
Put the pasta into the sauce. Coat all of the pasta with the sauce.
Your scrumptious fettuccine Alfredo is ready to be eaten. It tastes best right off the stove, so serve it immediately!
- Garlic Lime Chicken with a Spicy Twist
Ingredients
- 3/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper
- 1/8 tsp paprika
- 1/4 tsp garlic powder
- 1/8 tsp onion powder
- 1/4 tsp dried parsley
- 4 boneless, skinless chicken breast halves
- 2 tbsp butter
- 1 tbsp olive oil
- 2 tsp garlic powder
- 3 tbsp lime juice
If you’re looking for something that is quick but loaded with flavor then this chicken recipe is for you.
Get yourself a small bowl, put in the cayenne, paprika, onion powder, parsley, thyme, ¼ tsp of garlic powder, black pepper and salt. Mix it all up and generously rub it into both sides of the chicken breasts.
Put a large skillet onto medium heat and put in the butter and olive oil. Put in the chicken sauté it until it turns golden brown (it should take about 6 minutes). Drizzle the chicken with lime juice and garlic powder. Let the chicken cook for another 5 minutes. Don’t forget to stir frequently to keep covering the chicken with the sauce, pumping it with flavor.
There you have it, 3 simple mouthwatering dishes that don’t take more than half an hour to prepare and use minimal utensils.
