Today the kids and I are bringing you a heathy dinner with Turkey Meatballs, Roasted Potatoes, and Carrot Salad. This budget friendly meal is one we enjoy making together. We can whip up this meal in less than 40 minutes and have leftovers for another meal later in the week. It’s perfect for our busy family.
Benefits of Cooking with kids
Cooking with your kids is a great way to spend time as a family. Cooking can help kids learn about healthy eating and nutrition, encourage math and reading skills, and foster cooperation. As a bonus, cooking encourages even the pickiest of eaters to try new foods.
Do you have a picky eater?
My youngest son can be a really picky eater. If he had his way, he would skip most vegetables. Luckily, I’ve found that if he helps me shop for groceries and cook, he is more likely to eat more vegetables.
If you have a picky eater like I do, take them with you to the grocery store. Let them help meal plan and pick out the foods for the week. You’ll find they are more likely to try what they pick out.
Budget Friendly Groceries at ALDI
We like shopping at our local ALDI where we can shop for real food and save money too. Their Fit & Active and Simply Nature organic lines are great for anyone looking for budget friendly, healthy food.
We picked up what we needed (excluding seasonings/staples) for our Turkey Meatballs, Roasted Potatoes, and Carrot Salad for $21.52 (after sales tax).
This meal will serve our family of 5 and create leftovers which will be repurposed for another meal (Meatloaf sandwiches and vegetable couscous) later in the week. That makes 2 meals for about $10 each.

These look so good! My kids love to eat meatballs on a toothpick for lunch. Makes a great alternative to a sandwich. You could easily swap the couscous for potato flakes to make this a gluten free meatball recipe. I may try that!
