During summer months, it’s good to have an arsenal of quick side dishes that don’t require cooking. Let’s face it, who wants to sit in a hot kitchen during the summer? This Poppy Seed Red Cabbage and Apple Slaw is a quick and easy side dish that requires no cooking and can be ready in a snap. It’s poppy-seed dressing is cool and refreshing, perfect for summer meals.

Coleslaws are wonderful make ahead dishes. Cabbage holds up well in dressing/liquid and maintains its crunch. You could easily make this salad the night before or the morning you want to eat it. Allowing the flavors to marry into one another gives this coleslaw a wonderful flavor. {Note: After about 24 hours, the cabbage and apple will lose its crunch.} But if you aren’t a make ahead kind of person, just throw everything together and eat it right away. It’s delicious either way.
Serve this Poppy Seed Red Cabbage and Apple Slaw as a side for lunch or dinner. You could make into an entrée salad with a grilled protein like shrimp, chicken, beef, of tofu. It’s an extremely versatile dish. The dressing for this salad is my Creamy Poppy Seed dressing. It’s one of my family’s favorites. It has a touch of honey and apple cider vinegar to give it a sweet and tangy flavor. It goes great with the cabbage, apples, and golden raisins.
Poppy Seed Red Cabbage and Apple Slaw
Ingredients
- 1/2 head red cabbage, thinly sliced or chopped
- 2 Granny Smith apples, cored and chopped
- 1 cup Golden raisins
- 1/2 cup Poppy Seed Dressing (or more to taste)
- 1/4 teaspoon salt
Instructions
- Combine all ingredients together.
- You can serve immediately or store in the refrigerator until ready to serve.
