Starbucks is known for its delicious egg white bites, but they’re not the only ones who know how to make a delicious breakfast bite. We make our own copycat version of Starbucks egg bites, and it’s so easy! All you need are eggs, bacon, cottage cheese, and gruyere cheese – that’s it!
You don’t even need expensive sous vide machine. This keto-friendly recipe will show you how to make these bacon & egg bites in your instant pot!

Starbuck Egg Bites
Starbuck Egg Bites are a wonderful breakfast, snack, or appetizer. When traveling and especially when flying, I find that it’s really easy to swing into a Starbucks’ for their sous vide egg bites. (It’s funny because the only time I really ever go to Starbucks is when I travel. Then I can’t resist a Starbucks Caramel Apple Spice or Starbucks Iced White Chocolate Mocha.)

Egg bites are protein-packed and low carb which is a big plus when starting out the day. When traveling, I grab the Bacon and Gruyere Cheese bites (my favorite) and an Americano or Dirty Chai, for a quick breakfast before setting off on whatever is planned for the day.
Sous vide machine versus a pressure cooker
Starbucks uses the sous vide cooking method to cook their eggs. Cooks say that sous vide is a better way to cook eggs. I don’t have a sous vide machine at home and I don’t see myself getting one anytime soon. But I find that cooking eggs in my Instant Pot work REALLY well!
I actually bought my pressure cooker after a friend talked about how easy it was to hard-boil fresh farm eggs and have the shells peel off easily. If you have ever had fresh eggs and boiled on the stove, you’ll know that the shells don’t peel off and if you try, the peel takes most of the hard-boiled egg with it leaving a HUGE mess.
Luckily, I find that it’s easy to replicate the egg bites that Starbucks serves in my instant pot! If you want an easier time at home then go with a pressure cooker too because all you have to do is put your eggs in there and set the timer.
Are Starbucks Egg Bites Keto?
Some people think that egg bites you get in-store are keto-friendly because they contain eggs, cheese, and bacon. However, the original (in-store) Starbucks Sous Vide Egg Bites with Bacon & Gruyere have 9 grams of carbs! Eggs themselves do not raise blood sugar levels; however, many ingredients used in commercial production have carbs, which would make them not keto-friendly. The bacon, for example in the original Starbucks version, has cane sugar listed on the nutrition facts on the website.
You can make your own version without the sugar and carbs in the Instant Pot and they’ll be much more ketogenic friendly. This homemade egg bites recipe I’m sharing with you is definitely keto and is a good source of protein.

Easy Keto Breakfast Recipe
A better way to enjoy eggs is when they are made from scratch and contain no added sugar or gluten. A lot of people react negatively to the idea of a low-carb diet because they associate it with eating boring food that tastes bad, but this couldn’t be further from the truth! These bacon and gruyere bites I am sharing are delicious!!!!
My copycat recipe is super simple with just 4 ingredients and it is easy to make them keto-friendly. Opt for keto-friendly bacon and block cheese that you shred yourself. Pre-shredded bagged cheese often has added corn or rice starch to prevent caking. These anti-caking agents are considered not keto-friendly.

What You’ll Need to Make Bacon and Gruyere Instant Pot Egg Bites
- 1 pound bacon, chopped
- 8 whole eggs – the original recipe called for egg whites only. I prefer whole eggs as I feel they taste better.
- 1 cup Gruyere cheese, shredded
- 1 cup cottage cheese, small curd
- Salt and Pepper
- Hot sauce (optional)
- Instant Pot with trivet
- Blender or food Processor
- Egg Bites Pan (silicone mold) with lid
- I have and use the Instant Pot brand silicone mold that I bought on Amazon.
Substitutions: You can easily swap up the ingredients to suit your tastes.
- Gruyere cheese – cheddar cheese, Monterrey jack cheese, or feta cheese
- Cottage cheese – plain Greek yogurt
- Crumbled Bacon – chopped ham
How to Make Egg Bites
- Place your instant pot on the “sauté” setting and brown the chopped bacon. Stir occasionally to ensure even cooking and prevent sticking.
- While the bacon cooks, combine together eggs, cottage cheese, and gruyere cheese in a blender. (Note: I find the blender or food processor is easier than whisking everything in a bowl.) Process the egg mixture until the batter is smooth.
- Once the bacon is cooked, remove it from the Instant pot pan with a slotted spoon to drain excess grease.
- Remove grease from the pan and wash out the Instant Pot. For bacon grease, this silicone grease saver is great so the grease can be used for other recipes.
- Return the pot to the pressure cooker. Add 1 cup of water and a silicone trivet.
- Pour egg mixture into the silicone egg bite mold, filling each cup halfway. Top with chopped/crumbled bacon.
- Cover the mold with the lid and carefully lower it into the Instant Pot.
- Close the pressure cooker and seal the valve. Program using the “manual” or “ high pressure cook” function for a cooking time of 10 minutes.
- When the cooking cycle is complete, allow to pressure release naturally for 10 minutes before performing a quick release to remove the remaining pressure.
- Carefully remove the silicone mold. The egg bites will have puffed up but will deflate slowly as they cool. Pop the egg bites from the silicone mold onto a plate.
- Serve with hot sauce if desired.
Can You Make Egg Bites Ahead of Time?
Yes, you can make these ahead of time and store them in the refrigerator for up to 7 days. I find it best to wrap in plastic wrap and then in a glass airtight container.
How Do you Reheat Egg Bites in a Microwave?
You can reheat egg bites in the microwave for about 30 seconds when at room temperature or for 60-90 seconds when refrigerated.
- The best way to reheat them is to place two on a microwave-safe plate.
- Cover loosely with a damp towel.
- Cook at 50% power level for 30 second time periods. Internal temperature should be 165°F or 74°C.
- If the bites need more time, cook an additional 30-second until the interval temperature is reached.
- Remove the plate from the microwave and let the food rest for 1-2 minutes before serving.
Can You Freeze Egg Bites?
It is not recommended to freeze egg bites. Freezing them will result in a rubbery texture which is a bit off-putting.
Starbucks Egg Bites with Bacon & Gruyere (Instant Pot version)
Ingredients

- 1 cup shredded gruyere cheese
- 1 pound bacon, chopped
- Salt and black pepper, as desired
- Hot Sauce, optional
