When the weather cools off in Oklahoma City, my youngest son and I quit reaching for the peanut butter and jelly. Cold nights turn into soup and sammy nights at our house. The sammy is almost always a grilled cheese from the air fryer, and the soup is my favorite: a classic roasted tomato and basil.
Here’s the short answer. To make a grilled cheese sandwich in the air fryer, brush melted butter on the inside of the bread, spread mayonnaise on the outside, and layer sharp cheddar in the middle. Preheat the air fryer at 380°F for 3 minutes, then air fry the sandwich for 4 to 5 minutes, flipping halfway. In my Ninja Air Fryer Pro XL, one sandwich comes out golden in about 4 minutes. It’s a teen friendly recipe with four ingredients and no hot skillet to babysit.

Why the Air Fryer Beats the Skillet for Grilled Cheese
A skillet asks you to stand there. You nudge the heat down, lift a corner to check, and still end up with one side darker than the other. The air fryer circulates hot air around the whole sandwich, so the bread toasts and the cheese melts at the same time. You set the timer, flip once, and walk away.
That hands off part is why it works so well for teens. There’s no open flame and no pan of hot butter, and the timer does the remembering.

Why I Put Butter Inside and Mayo Outside
Most air fryer grilled cheese recipes pick one fat and put it on the outside. I use both, and each one has a job.
Butter goes on the inside. It sits right against the cheese, so you taste it in every bite instead of losing it to the crust.
Mayonnaise goes on the outside. It spreads thin and evenly, straight from the jar, all the way to the edges. That even layer is what turns the outside a deep, crackly gold. Plenty of cooks swear by mayo for the crust, including recipe developers at The Washington Post and Love Bakes Good Cakes.
And no, the finished sandwich doesn’t taste like mayonnaise.
Ingredients for Air Fryer Grilled Cheese
This makes 2 sandwiches.

- 4 slices bread (I use white sandwich bread)
- 6 slices cheese (I use sharp cheddar, 3 slices per sandwich)
- 2 tablespoons butter, melted
- 2 tablespoons mayonnaise
Best Cheese for Air Fryer Grilled Cheese
Sharp cheddar is my go to because it tastes like something. Three slices per sandwich gives you a thick, gooey middle. If you want to switch it up, any cheese that melts well works.
| Cheese | Why use it |
|---|---|
| Sharp cheddar | Bold, tangy flavor. What I use. |
| American | Very smooth melt, mild flavor |
| Young Gouda | The cheese in a classic Dutch tosti |
| Monterey Jack | Mild and creamy |
| Pepper Jack | Monterey Jack with a little heat |
Sliced cheese is the easiest choice here. Slices lay flat and cover the bread evenly. Love and Lemons makes the same point, noting that shredded cheese can get messy in the air fryer.
Best Bread to Use
I use plain white sandwich bread. It’s soft inside, it crisps up fast, and it’s what most of us already have in the pantry. Sourdough and Texas toast work too if you want a heartier sandwich. Skip anything very thin or airy, because a light top slice is more likely to shift around under the fan.
How to Make a Grilled Cheese Sandwich in the Air Fryer
1. Preheat. Set the air fryer to 380°F and let it run empty for 3 minutes. Ninja recommends 3 minutes of preheating for its air fryers, and a hot basket starts browning the bread right away.
2. Melt the butter. While the air fryer heats, microwave 2 tablespoons of butter until melted.
3. Butter one side. Brush one side of each bread slice with melted butter.

4. Mayo the other side. Flip each slice over and spread mayonnaise on the other side.

5. Add the cheese. Lay 2 slices buttered side up. Top each with 3 slices of sharp cheddar.

6. Close it up. Top each with a second slice, buttered side down, so the mayo sides face out.

7. Air fry. If you like, line the hot basket with a single sheet of foil first. I do, because it catches the cheese that drips out the sides. Set one sandwich on top so it holds the foil in place. Air fry at 380°F for 4 to 5 minutes, flipping halfway. In my Ninja Air Fryer Pro XL, it’s done in about 4 minutes.

8. Serve. Repeat with the second sandwich, slice, and serve hot.
Tips for Getting It Right Every Time
- Cook one at a time if your basket is snug. I cook one sandwich at a time in my Ninja. RTINGS notes this model’s cooking surface is about the same as Ninja’s smaller 5.1 quart Pro, so it doesn’t leave much extra floor space.
- Check early the first time. Air fryers run differently. Peek at the 3 minute mark on your first sandwich, and you’ll know your machine’s timing after that.
- Foil is optional. A foil liner catches melted cheese and makes cleanup faster. Add it with the sandwich, not during the preheat, so the fan can’t blow it around. Use one layer under the sandwich and leave some of the basket holes uncovered so hot air can move. Check your air fryer’s manual to make sure foil is allowed.
- Watch the top slice. The fan can shift a light top slice. If it moves, just nudge it back into place when you flip.
- Keep cheese inside the edges. Cheese hanging over the crust drips into the basket and burns.
- Spread the mayo to the edges. Bare spots stay pale.
Easy Variations Teens Will Actually Make
My Mom’s Dutch Tosti
My Dutch mother made tosti, the Netherlands’ answer to a grilled cheese, with Gouda and sliced ham. The ham and cheese version is so standard there that The Dutch Table notes a plain “tosti” usually means ham and cheese. To make it in the air fryer, swap the cheddar for Gouda and add a slice of ham. Cook it exactly the same way. In the Netherlands it’s often eaten with ketchup or curry ketchup on the side.
More Ideas
- Tosti Hawaii: Ham, cheese, and a slice of pineapple, another Dutch favorite.
- Ham and cheddar: Thin deli ham between the cheddar slices.
- Pizza melt: Mozzarella, a few slices of pepperoni, and marinara on the side for dipping.
- Apple cheddar: Thin apple slices tucked between the cheddar. Sweet and savory.
Keep the add ins thin so the heat still reaches the cheese in the middle.
What to Serve with Grilled Cheese
My favorite partner for these is a classic roasted tomato and basil soup. Grilled cheese pairs well with plenty of other soups and sides too. Here are a few from my kitchen:

How to Store and Reheat Leftovers
Grilled cheese is best eaten right away. If you do have leftovers, cool them, wrap them tightly or put them in an airtight container, and refrigerate. The USDA says cooked leftovers keep in the fridge for 3 to 4 days.
To reheat, put the sandwich back in the air fryer until the bread crisps and the center is hot. The USDA recommends reheating leftovers to 165°F. Skip the microwave, which leaves the bread soft and chewy.

Grilled Cheese in an Air Fryer FAQ

- • 6 slices cheese (sharp cheddar)
- • 2 tablespoons butter
- • 2 tablespoons mayonnaise
Instructions
- Preheat the air fryer at 380°F for 3 minutes.
- Melt the butter in the microwave. Brush one side of each bread slice with melted butter.

Prefer the Stovetop? My Go To Pan
If you’d rather make your grilled cheese on the stovetop, I recommend a HexClad fry pan. I swapped out all my pans for HexClad years ago and still love them.
