S’mores are a staple on a family camping trip. It’s hard to resist roasting marshmallows over the campfire to create those delicious, yet SUPER messy, s’mores. They are made with a homemade trail mix oatmeal cookie, marshmallow, honey, and sliced banana. They are delicious and I’ll show you how to make them at home and on your next camping trip.

Make Gluten-Free Trail Mix Cookies
The first step for these marshmallow and banana s’more cookies is to make the trail mix base. These are gluten-free and vegan. Bake the Trail Mix Cookies at home first before your camping trip. I actually make several batches at once and freeze the cookies so I can always have an on-the-go snack. It’s also easy to create S’mores anytime in your microwave, backyard firepit, or on a camping trip.

How to Roast the Perfect Marshmallow
Kids of all ages love to grab their roasting stick, press that squishy, jumbo-sized marshmallow onto it, and roast it until it’s just right. For my kids, that’s when the marshmallow is totally charred on the outside and ooey gooey on the inside. As for me, I like it warm and gooey, but without any burnt edges. What about you? How do you like your marshmallow?
To get the perfectly roasted marshmallow, find a stick around the campsite or use skewers. If you’re using a stick, sharpen the end so the marshmallow can slide on and off easier. Hold your marshmallow about 6 inches over the coals to roast it slowly. Keep rotating and be patient.
If your marshmallow catches fire, just blow it out gently. A perfectly roasted marshmallow takes some time to get the perfect golden crust on the outside and melty inside.
Assemble Your S’mores Cookies
Once you have the premade trail mix cookies and your perfectly roasted marshmallow, it’s time to put your s’mores cookies together. It’s just as simple as the classic s’mores but uses a sliced banana instead of chocolate. If you want to add a square of dark chocolate to your cookie though – who am I to judge?

Tail Mix Cookies (Vegan & Gluten Free)
Gluten Free and vegan cookies that make great anytime. We use them to make Honey Amores.
Ingredients
- 2 cup old fashioned oats
- 1/4 cup ground hempseed
- 1/4 cup coconut flour
- 1/4 cup ground flaxseed
- 2 ripe bananas, mashed
- 1/2 cup nut butter
- 2 Tablespoon honey
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon sea salt
- 1/4 cup dried cranberries or other dried fruit
Instructions
- Preheat oven to 350 degrees F.
- Mix all the ingredients together in a large mixing bowl.
- Using a 2 Tablespoon cookie scoop, place rounded spoonfuls of the cookie dough onto a cookie sheet with a silicone liner.
- Press gently to flat into a disk about 1/2” thick.
- Place cookie sheet in oven and bake for 13-15 minutes or until cookies are lightly browned and firm to the touch.
- Remove from oven and allow to cool on cookie sheet for 1-2 minutes, then remove to a cooling rack.

Banana Honey S’Mores Cookies
1 dozen Trail Mix Cookies (recipe above)
6 jumbo marshmallows
1 banana sliced on a diagonal for a larger section
2 Tablespoons Honey
Just layer the roasted marshmallow, sliced banana, and a drizzle of honey between two trail mix cookies and enjoy.
Eat S’mores Cookies at Home
Place 6 cookies on a microwave-safe plate.
Top each cookie with a marshmallow.
Microwave on high 15-30 seconds or until the marshmallow begins to inflate and soften.
Remove plate from microwave.
Drizzle each marshmallow with honey.
Top with banana slice and another cookie.
If you’re making these at home, mini marshmallows work just as well.

Sweeten with Honey
I like baking with honey because it contains proteins, vitamins, and minerals. 1 Tablespoon of honey contains 17 grams of carbohydrates and has a slightly lower glycemic Index than sugar.
How to Substitute Honey for Sugar
Honey can be substituted for sugar in almost all baking recipes. Local honey will contain flavors from the bees and plants in your area. The basic rule of thumb for substition is:
- Use 1/2-2/3 cup of honey for 1 cup of sugar
- Decrease your other liquids by 1/4 cup
- Decrease baking temperature by 25 degrees F
S’mores have a way of bringing back cherished family memories of cozy nights by the campfire, swapping stories under the stars, and giggling with loved ones as marshmallows dance over the flames.
