How to Make Cinnamon Roll Pancakes
This recipe is pretty easy as it’s done in stages to give you the look of a traditional cinnamon bun. You can create the pancakes in advance and then frost them just before serving. FYI, they store well in the freezer too!
First, you’ll want to create your dry pancake mix. I make this ahead of time and store in the pantry. Second, combine the ingredients for both the cinnamon swirl filling and cream cheese frosting in separate bowls.
Next, you want to mix together a portion of the dry pancake mix, egg, buttermilk, and melted butter to create your pancake batter. The recipe below makes 8 pancakes, but it’s easy to double and triple as needed.
Pancakes can be cooked on a griddle or in a stove top pan. Ladle the pancake batter and then apply a swirl of cinnamon mixture over the batter. Cook until tiny bubbles appear in the pancake, flip and cook an additional minute.
Lastly, you’ll remove cooked pancake and drizzle or smear cream cheese frosting over it and enjoy.
Cinnamon Roll Pancakes
Ingredients
Dry Pancake Mix
- 4 cups white whole wheat flour
- 3 Tablespoons baking powder
- 3 Tablespoons sugar or Swerve sweetener (Keto sugar)
- 2 teaspoons baking soda
- 1 teaspoon salt
Cinnamon Swirl Filling
- 1/2 cup brown sugar
- 4 Tablespoons melted butter
- 2 teaspoons ground cinnamon
Cream Cheese Glaze
- 2 ounces cream cheese, softened
- 3 Tablespoons salted butter, softened
- 3/4 cup powdered sugar or Swerve confectioners sugar
- 1/2 teaspoon vanilla extract
Cinnamon Roll Pancakes
- 1 cup pancake mix
- 1 large egg
- 1 cup buttermilk
- 1 Tablespoon melted butter
Instructions
Dry Pancake Mix - Mix together all the dry pancake ingredients in a large bowl. Set aside amount needed for cinnamon swirl pancakes and store remainder in an air tight container.
Cinnamon Swirl Filling - Combine cinnamon swirl ingredients in a small bowl. Set aside or transfer to a squeeze bottle for easy application.
Cream Cheese Glaze - Combine cream cheese glaze ingredients together in a small bowl. Set aside.
Cinnamon Roll Pancakes
- Preheat griddle to 350˚F or a skillet on the stove top to medium-low heat.
- Combine pancake ingredients together in a large bowl. Beat with a fork or whisk just until combined.
- Ladle pancake batter onto hot surface.
- Apply a swirl of cinnamon mixture over the batter before it sets. Cook 2-3 minutes or until tiny bubbles set in the batter.
- Flip pancakes and cook an additional minute.
- Remove cooked pancakes. Drizzle or smear with cream cheese frosting
